Hold L1 + R1 and press X, Circle(2), X at the main menu. You will hear a sound if you have entered the code correctly.

High speed mode:
Hold L1 + R1 and press Circle(2), Triangle(2) at the main menu. You will hear a sound if you have entered the code correctly.

Chicken heads:
Hold L1 + R1 and press X, Circle(2), Square at the main menu. You will hear a sound if you have entered the code correctly.

Toy block cars:

Disable HUD:

Easy wins:
To cheat in races, you can go in shortcuts or do the following. Clash into a car then unclash. This will give you a speed boost and leave the other car behind. Keep doing this repeatedly until you get ahead of everyone. REMEMBER: You cannot do this to already clashed cars.
