When you finish some missions (for example: 555 we tip) listen to the radio. You'll hear the person talking about the mission just passed.

Easter Egg: Rockstar Cameos
In one of Zero's mission, where you have to use the machine gun to knock down the RC planes, you can see some action figures of Rockstar characters like Tommy Vercetti, Lance Vance, as well as characters from other games in Rockstar's line-up during Zero's dialogue.

Arcade Games
Walk up to any arcade machine or console system in the game and press triangle, you will be able to play retroesque arcade games.

Change the size of the moon
Shoot the moon with the sniper rifle and it will grow until it reaches a certain size when he will shrink when you shoot it again.

Funny License Plates
If you import a car at the docks, most but not all cars have plates that differ from normal ones. One says "our fergie", or "disco stu", and a really special one says "ea sucks". Try it out.

In San Fierro, at the BIG red bridge, the tower closest to the city, get the jet-pack fly to the top and there will be a sign that says.......\"There are no Easter Eggs Here, GO AWAY\".

Make the cops arrest other people for once:
If a cop is at a red light and a car is behind the cop car, crash your car into the car so it hits the cop....cop gets out and so does the other guy and they start shooting/fighting!

Go to idlewood near big smokes house and go to a dead end turn left and you'll see a marker like when u have a girlfriend and you can do two player you have some players to chose but chose the hoe and put her in your car and go to a dark place and then you no what happens then you come out and kiss and then it says drop her home and you take her to the jonsen house (cj's original house) and you see them having sex and then she lives at your house and it says player two has died and from now on she lives there and you can have sex any time.
