Pick exhibition mode and choose "Williams" as a driver. Use the Analog-stick to change his first name to "Nostalgia". You can also finish the extreme challenge with full points under challenge mode to unlock Jerez, the old European Grand Prix circuit.

Pick single race mode and choose M. Schumacher or E. Irvine as a driver. Pick a manual transmission. When the race begins, change gears until getting to 7th gear. Quit the race, and enter Grand Prix mode. Start or resume a season and any car you pick will have a 7-speed transmission.
